Since 1975, Heidelberg Pastry Shoppe has been baking crusty European-style breads, decorating wedding cakes, and serving authentic German fare to presidents, ambassadors, and the wider Washington, D.C. region. Owner Wolfgang Büchler came to Washington from Germany and spent decades building what is now regarded as the most authentic German bakery in the DC metro area — a distinction earned through genuine craft rather than marketing. The shop’s breads alone justify the trip: Baltic Rye, Black Forest Sourdough Rye, Aachener Brot loaded with mixed grains and seeds, and classic German rolls (Brötchen) baked fresh daily. When Büchler first introduced crusty European-style bread to Washington in the 1970s, customers returned it thinking it was stale — today those same loaves have three generations of loyal buyers.
